Quinoa is a seed native to our Southamerican Andes. Its main attribute is its overall nutrient richness. It has even been selected by FAO as a food with high nutritive value. Quinoa is an excellent source of high quality proteins as well as all essential amino acids including a good proportion of lysine and isoleucine.
Additionally Quinoa is a good source of fiber and provides interesting amounts of some antioxidant flavonoids as quercetin and kaempferol. Iron, magnesium, phosphorus and copper are among the minerals it excels. Quinoa is often considered a cereal, although this is not correct. It has many nutritional advantages over common cereals.
Quinoa is gluten free. Quinoa has a light, fluffy texture when cooked, and a soft flavor that can be even eaten as a good alternative to rice, but the possible uses are plentiful.
